Spicy Tempeh Chili

Ingredients:

  1. 2 teaspoons - coconut oil
  2. 3 ounces - non-GMO tempeh OR organic lean ground turkey crumbled
  3. 1/2 - small onion diced
  4. 1/2 - organic red bell pepper seeded, diced
  5. 1/2 - organic green bell pepper seeded, diced
  6. 1/2 - serrano chile seeded, diced
  7. 1/2 cups - cooked black beans
  8. 1/2 cups - cooked pinto beans
  9. 1/2 cups - organic crushed tomatoes
  10. 1 teaspoons - chili powder
  11. 1 teaspoons - ground cumin
  12. 1/2 teaspoons - garlic powder
  13. 1/2 - avocado diced, for topping
  14. - shredded cheese for topping, optional

Directions:

1. In pot, heat oil over medium heat and sauté tempeh or turkey with onion, bell peppers and serrano chile. Season with salt and black pepper and cook until browned, about 10 minutes.

2. Stir in beans, tomatoes, spices and 2 cups of water. Simmer 20-25 minutes until flavors have blended.

3. Serve hot topped with avocado and cheese, if desired.
