Pepper Steak in the Crockpot

Ingredients:

  1. 1/3 cups - soy sauce
  2. 2 tablespoons - cornstarch
  3. 1 teaspoons - minced garlic OR 1/2 teaspoon garlic powder
  4. 1 tablespoons - Worcestershire sauce
  5. 2 pounds - top sirloin cut into 2-inch strips
  6. 1 - yellow onion finely diced
  7. 1 cans - 14.5 oz. petite diced tomatoes
  8. 2 tablespoons - brown sugar
  9. 3 tablespoons - soy sauce
  10. 1 tablespoons - Worcestershire sauce
  11. 1 - small green pepper chopped
  12. 1 cups - beef broth
  13. 1 teaspoons - minced garlic
  14. 1/4 teaspoons - cayenne pepper
  15. 1/4 teaspoons - ground ginger
  16. 3 - sweet bell peppers various colors, sliced
  17. 3 tablespoons - cornstarch mixed with same amount of cold water
  18. - cooked rice or quinoa optional, for serving with

Directions:

Place the sirloin strips in a large plastic bag or lidded container with the marinade ingredients and shake to coat the meat well. Seal and place in fridge overnight, a few hours, or at least 30 minutes before cooking.

Place diced onion, diced tomatoes, and brown sugar into the crockpot. Add soy sauce, Worcestershire sauce, bell pepper, broth, garlic, cayenne and ginger.

Discard the marinade and add the sirloin strips to the crockpot with a dash of black pepper, if desired. Cover and cook for 6 to 8 hours on low heat.

Add in the sliced sweet peppers about 2 hours before ready to eat. Stir together cornstarch and water in a small dish, and pour into crockpot, stirring well; cover and allow to continue cooking for last 2 hours.

Before serving, add any additional garnishes or spices as desired, and enjoy over some cooked rice or quinoa.
