Brief Description
Of course we all know that fresh fruit or vegetables make a healthy snack and are good for us (and our kids or parents). But sometimes it is nice to mix things up a bit, especially for the kids, and offer some other interesting options for healthy snack time. Part of healthy living is making sure that neither our meals nor our snacks are super-sized, too, right? So, even with a healthy snack, be sure to keep the amount small as well, just enough to keep up energy levels and tie you over to the next healthy meal. 1. Nutty Date Balls from Groovy Beets - these snack balls are naturally sweetened by dates and are fun to experiment with by adding in raw cacao powder for a superfood punch; made with walnuts, coconut, dates and vanilla, these are super easy to whip up (though they should be refrigerated for a few hours before serving).
2. Apple Boats from Texas 4-H - Apples are cut in half (and cores removed), then filled with peanut butter mixture with raisins, and topped off with a cheese slice as a "sail" for the "boat". Cute, right? Notes:
I will sometimes double the seasonings and add a bag of cooked faro to the salad and make a complete meal of it. Leave out feta to make it vegan/dairy free. Pre steamed lentils can be found at Trader Joe's.

Ingredients:
- 1 bags - Pre Steamed Lentils
- 1 cloves - garlic
- 1/4 teaspoons - oregano
- 1/4 teaspoons - cinnamon
- 1/2 teaspoons - salt
- 1/4 cups - olive oil
- 1 tablespoons - rice vinegar
- 1 teaspoons - lemon zest
- 1 tablespoons - lemon juice
- 1 - red bell pepper diced
- 1 - small seedless cucumber diced
- 1/4 cups - kalamata olives chopped
- 1 tablespoons - fresh mint chopped
- - feta cheese to your liking
Directions:
Mix it all together and refrigerate, you can't do it wrong, any order will work!! Enjoy
