A neighbor who has been going through a tough time recently inquired about some easy, quick easy dinner ideas for those rough days when she hasn't thought ahead about what to prepare for dinner. At my house, those meals tend to be an easy Mexican (tacos, burritos, taco salad) or Italian (spaghetti) or grilling dish.
However, her family wasn't as fond of the Mexican dishes - so I thought it would be a great idea to share some other easy dinner ideas, in case you have one of those nights when you didn't plan for dinner (or had a plan and don't want to follow it).
These 5 meals are quick, simple, generally use ingredients you are likely to have on hand, and will provide the whole family with an enjoyable meal around the dinner table (instead of requiring a trip through the drive-thru).
This super easy dish is made with rice (leftover rice works well, too), eggs, frozen peas and carrots, chopped ham, and seasonings. It's ready in about 30 minutes or so, and doesn't require much prep (unless you need to cook the rice first - but using quick rice makes this easy, too).
Cornmeal-crusted cod portions are cooked in the skillet with Cajun seasoning, and served on whole wheat bread with a homemade pineapple coleslaw (coleslaw mix with pineapple chunks and dressing) for a quick delicious and healthy meal the whole family can enjoy.
Diced chicken pieces seasoned with curry and chili powder cooked with onion, garlic and peppers in coconut milk sauce, served over rice or farro. Be sure to dice the chicken first and let it sit in the seasonings at room temp for about 30 minutes (while starting the rest of the dish) for best flavor.
This one-skillet-meal made with sausage, potatoes, onion and sauerkraut is a crowd pleaser and only takes about 30 minutes to have ready to set on the table for dinner.
Make individual foil packets each filled with a chicken breast half topped with sliced zucchini, spaghetti sauce, mozzarella and parmesan cheeses. Fold up the packets and bake (20+ minutes) or grill (12+ minutes) for a quick, easy dinner.
