Cooking dinner almost every night sometimes can feel a bit taxing - planning meals, scheduling around work and family activities, getting groceries and prepping ahead.
I get it ... it's a lot to take care of. These fabulous dinner ideas will help you with the meal planning (and adding these recipes to your grocery list will help with that part, too)!
When planning out the meals, think ahead about the week's schedule, noticing which days might work best for a crockpot meal or when you'll need a fast, easy dinner that you can get on the table quickly between work and weeknight sports or activities with the kids.
Now on with those fabulous dinner ideas we promised! (Just click on the recipe name or picture to see the detailed recipe and to save it to your own recipe box or print).
A simple dish (though it might look complicated at first glance), "Family Meal" Chicken with Spinach is delicious and relatively quick. While the pan-seared chicken finishes cooking in the oven for the last few minutes, use the same skillet to quickly wilt some fresh spinach to serve alongside. A fresh, delicious meal.
Buttermilk Pecan Chicken - a baked dish with only 4 ingredients (serve with a simple salad or cooked greens); soak the chicken pieces in buttermilk for an hour or more (prep the morning of or night before to save time at dinner time), then coat in chopped pecans and panko crumbs and bake for about 30 minutes.
Italian Pasta Stir-Fry offers a healthy, vegetarian dinner. Feel free to top it off with some grilled chicken or fish, if desired. Stir-fried zucchini, tomatoes and onions tossed with whole grain linguine pasta and seasonings.
If you have a hankering for some fish, this Mojito-Marinated Fish with Avocado Chopped Salad will fill the bill, and it's ready in about 30 minutes!
The Mexican Layered Salad is perfect for a large gathering and is so easy to make ahead! It's ready to serve up quickly when you need it.
Beef with Broccoli in Crockpot - a delicious crockpot dish, the beef cooks long and slow to make it super tender before adding the broccoli during the last 30 minutes; enjoy over some brown rice. Yummy!
Chicken Biryani provides Indian flair and flavor in a dish of chicken thighs, rice, peas and carrots, all cooked in one skillet for a simple dinner ready in about 40 minutes. (While the rice is cooking, toss together a salad or heat up some naan to serve with it!)
