This scrumptious dish was something I put together one afternoon when I was home between meetings and realized I had not made a plan for dinner that evening.
Scrambling around and looking at what I had in the freezer and fridge, I decided to throw some vegetables into the crockpot, season them, top with chicken, and leave it to cook as I headed back out the door.
Thankfully, it turned out quite well and was a delicious meal, which I dished up with some quick brown rice after returning home for the evening. It is so easy to put together, I wanted to share it with you for your family!
So, let's get started (and feel free to use whatever mix of vegetables you might have on hand to replace any of the ones in this particular recipe).
First I started with green beans (frozen whole green beans, because I didn't have any fresh ones in the fridge) and tossed those in the crockpot.
Next up, I sliced some sweet peppers (using up some yellow ones I had in the fridge) and added those.
Baby carrots, diced onion, and sliced mushrooms provided the next layer of goodness. I tossed those into the crockpot as well, sprinkling some Italian seasoning over all.
Last but not least, I placed into the crockpot the chicken tenders (seasoned with salt, pepper and a little fajita seasoning - because I like the garlic / onion base flavor in it) and poured some chicken broth over all of it.
Since it was already past noon when I started this dish, I cooked it on high for 4 hours (plus a little longer by the time we were ready to eat); but if you put it on in the morning, just set it to low heat for 8 hours and it will still be fabulous.
I cooked up some quick brown rice at the end for serving with the chicken and vegetables for a complete, well-rounded meal.
