Fish tacos are so simple and easy to make, as well as quick (even if your fish is frozen), so you can have a healthy meal on the table in no time even on a hectic weeknight with the whole family.
I love doing fish tacos with tilapia, because the fillets are thin enough that even if I haven't thawed them out ahead of time, I can thaw them in the sink in some cold water, and still get dinner on the table pretty quickly, since they also don't take long to cook.
If you need to thaw the fish fillets, set them to thawing, and then gather your tortillas and taco toppings or garnishes so you're all ready to go.
I recommend serving them with some cabbage slaw or salad mix with shredded carrots (I just really like the crunch and color) as well as your favorite crumbled or grated cheese (queso fresco, pepper jack, or Mexican blend), sliced avocado, sour cream, some lemon or lime to squeeze over the fish after cooking, and your favorite salsa.
Meantime, this is a great task for the kids to help with - prepping the toppings - or set them to work getting out the plates and silverware so the table is ready for dinner, too.
We will need a dab of butter for cooking the fish, some seasoning (I like to use Fajita or Blackening seasoning for more kick), and / or salt and pepper, to taste.
Once the fish is thawed, melt the butter in a hot skillet, season your fillets, and cook them about 3-4 minutes on each side (or a little more or less depending on the heat of your skillet) until cooked through and starting to lightly brown.
In another skillet over medium-high heat, heat up your tortillas one at a time, turning after a few seconds on each side, so they're warm and soft for your dinner. Then if you're serving family style, heap the fish fillets on a large platter, squeeze a little lemon or lime juice over them, set out the hot tortillas and prepared toppings, and let everyone dig in!
