1 clove garlic, minced 1/3 cup white wine or red wine vinegar 2/3 cup olive oil 2 teaspoons kosher salt (or 1 teaspoon table salt) freshly ground black pepper, to taste

Now for some terrific variations - whether you like fruity, spicy, savory, or crisp, we've got you covered with these options. 1. Fruit Vinaigrette1 tablespoon fruit preserves, jam or jelly (OR 1/4 cup diced fruit with honey to taste) fruity vinegar instead of white or red wine vinegar
In the basic vinaigrette, leave out the garlic, use a fruity vinegar (such as passion fruit, mango, raspberry, etc), add the fresh fruit or preserves, and blend well. This type of vinaigrette is great over a fresh Spinach Salad.
2. Tomato VinaigretteAdd 1 small ripe tomato to the basic vinaigrette and blend until desired consistency.
3. Herb Vinaigrette1 teaspoon dried OR 1 tablespoon chopped fresh herbs (Pick just one or a combination of herbs, as desired: cilantro, mint, basil, parsley, dill, marjoram, oregano)
Add the herbs to the basic vinaigrette and mix until blended well. This type of vinaigrette is delicious with almost any Pasta Salad (toss it with pasta ingredients shortly before serving).
4. Asian VinaigretteReplace olive oil in basic vinaigrette with vegetable oil Replace white wine vinegar in basic vinaigrette with cider or rice vinegar Replace salt in basic vinaigrette with 1 tablespoon low-sodium soy sauce 1 teaspoon minced fresh ginger 1 teaspoon sesame oil
Combine ingredients above with remaining basic vinaigrette ingredients and shake or blend until thoroughly combined.
5. Lemon VinaigretteReplace vinegar in basic recipe with same amount of lemon juice Zest of 1/2 lemon 1/2 teaspoon sugar 1 teaspoon Dijon mustard
Add above ingredients to basic vinaigrette (replacing vinegar with lemon juice) and shake to combine well.
6. Curry Vinaigrette1 teaspoon curry powder 1 teaspoon whole-grain mustard
Add the above ingredients to the basic vinaigrette and shake to desired consistency.
7. Balsamic VinaigretteReplace vinegar in basic vinaigrette with balsamic vinegar 1 teaspoon Dijon mustard 2 teaspoons honey
Add above ingredients to basic vinaigrette recipe (using balsamic vinegar) and shake well until blended.
