• 1 teaspoon dried basil • 1 teaspoon garlic powder • 1/2 teaspoon crushed oregano • 1/2 teaspoon crushed rosemary • 1/2 teaspoon sea salt • 4 salmon fillets • 5 teaspoons olive oil • 2 tablespoons sugar • 1 medium fennel bulb, sliced • 1 cup cherry or grape tomatoes, halved • lemon wedges, for serving
Mix the seasonings in a small bowl, and sprinkle 2 teaspoons of the mixture over the salmon fillets. Reserve remaining seasoning mixture and set aside.
Heat 3 teaspoons olive oil in large skillet on medium-high heat; place salmon in skillet and cook for 5 minutes.
Meanwhile, add the sugar and remaining 2 teaspoons of olive oil to the reserved seasoning mixture and mix well. Add fennel and tomatoes to the mixture; toss to coat.
Turn the salmon fillets over in the skillet and place fennel mixture around the salmon; cook for 6 minutes or until fish flakes easily with fork.
Serve with lemon wedges.
