The mental function and concentration capacity of the brain is aided by the vitamin K and anthocyanins present in cabbage, especially high in red cabbage.  These same nutrients can also improve our system's defenses against Alzheimer's and dementia by helping prevent nerve damage and decay.

4. Cabbage Keeps Blood Pumping

The potassium in cabbage helps protect us from high blood pressure (which can lead to heart attack and stroke) by opening up the blood vessels and easing the flow of blood.  When the blood can flow through easily, there is reduced stress on the arteries and veins, keeping the blood pressure at a lower level.

Now, there are many more health benefits to eating cabbage, but another reason to enjoy cabbage regularly is its versatility and ease of preparing.  Cabbage is the main ingredient of most slaws, and makes a colorful, crunchy addition to salads.  It's also delicious when cooked up with pork or sausage or made into a warm hearty soup!
