Mushrooms. Fall always makes us think of the savory flavor of mushrooms - in soup, with rice, on a hamburger, with some scrambled eggs or an omelet. Oh my! So many ways to enjoy them.
Mushrooms cook quickly and are easy to chop up and toss into almost any dish for added flavor, texture, and a healthy dose of vitamins, minerals and antioxidants, too!

One of our favorite ways to enjoy mushrooms, though, is with a good stuffed mushroom recipe. These are great for any time you're having a party, a few friends over for dinner, or just some pre-dinner snacks and drinks.
Here are a few highlighted recipes we are sure you will enjoy - from healthy, diabetic-friendly versions to variations with quinoa, cream cheese, bacon, sausage, crab meat and more. Yummy!

These large mushrooms are lined with leaves of fresh spinach before being filled with cream cheese and crab meat mixture, topped off with bread crumbs, and baked until golden. Such a delightful flavor combination.

In case you or a family member are watching your diet due to diabetes concerns, these diabetic-friendly stuffed mushrooms are filled with reduced-fat cream cheese mixed with bell peppers, parsley, seasonings, and a sprinkling of bread crumbs.
Here's a dairy-free version of stuffed mushrooms, filled with ham, bell peppers, bread crumbs and fat-free Italian salad dressing. Make it even healthier by using turkey bacon instead of ham and substituting almond flour for the bread crumbs. (Photo by Nueske's)
