Zucchini Tossed Salad

Ingredients:

  1. 1 - small head romaine (8 oz.)
  2. 1 - small head Boston lettuce
  3. 3 - medium zucchini (1 lb.) washed, thinly sliced
  4. 1 cups - sliced radishes
  5. 3 tablespoons - sliced green onion
  6. 1/4 cups - salad oil
  7. 3 tablespoons - tarragon vinegar
  8. 2 teaspoons - salt
  9. 1 cloves - garlic crushed
  10. 1/8 teaspoons - black pepper

Directions:

Wash, dry and chill salad greens.

In a large bowl, toss zucchini, radishes and onion. Refrigerate, covered, for about 1 hour.

In a jar with tight-fitting lid, combine all ingredients for garlic dressing. Shake well and chill.

At serving time, tear romaine and lettuce into bite-size pieces. Add to vegetables in bowl. Add garlic dressing and toss until greens and vegetables are well coated.
