Zucchini Pasta & Tomato-Pesto Sauce

Ingredients:

  1. 2 - large zucchini
  2. 2 - or 3 large tomatoes
  3. 3 cloves - garlic peeled
  4. - handful of fresh basil
  5. 1/2 cups - pine nuts or walnuts
  6. 1/4 cups - nutritional yeast
  7. 1/4 cups - up to 1/2 cup extra-virgin olive oil
  8. - sea salt and pepper to taste

Directions:

1. With a mandolin or spiral slicer, slice zucchini into thin pasta-like ribbons. Set aside.

2. Put remaining ingredients into food processor and pulse until thoroughly combined. Toss with zucchini and enjoy.
