Ingredients:

  1. 3 cups - Zucchini shredded and squeezed
  2. 3 - Eggs
  3. 1 cups - Sour Cream
  4. 1 cups - Grated Cheddar Cheese
  5. 1/2 cups - Onion chopped
  6. 1/2 cups - Butter melted
  7. 1/4 teaspoons - Salt
  8. 1 1/2 cups - Cornmeal
  9. 1 1/2 cups - Cornmeal
  10. 3 cups - Zucchini shredded and squeezed
  11. 3 - Eggs
  12. 1 cups - Sour Cream
  13. 1 cups - Grated Cheddar Cheese
  14. 1/2 cups - Onion chopped
  15. 1/2 cups - Butter melted
  16. 1/4 teaspoons - Salt

Directions:

Heat oven to 400°
Spray 1 1/2 quart baking dish with nonstick cooking spray
In large bowl, whisk eggs until blended
Add sour cream, cheese, onion, butter and salt and stir until combined
Stir in zucchini and cornmeal until blended
Pour into baking dish
Bake 25 minutes or until edges are golden brown and knife comes out clean
