Ingredients:
- 3/4 teaspoons - garlic powder
- 1 cups - low-fat white cheese such as mozzarella, provolone, or romano
- 1/2 cups - coarsely grated parmesan cheese
- - salt & pepper to taste
- 2 - medium zucchini halved & sliced
- 2 - medium yellow squash halved & sliced
- 3 tablespoons - chopped fresh basil
- 2 tablespoons - thinly sliced green onion
- 1/2 teaspoons - dried thyme
Directions:
Preheat oven to 350 degrees Fahrenheit. Spray an 8x8-inch baking dish with olive oil or non-stick spray. After washing the squash, cut in half length-wise and then slice. Wash basil, dry with paper towels & chop finely. Slice green onions.
Combine the squash, basil, green onions, thyme, garlic powder, 1/2 cup of pizza cheese, and 1/2 cup of parmesan; stir together until vegetables are well-coated and herbs are distributed evenly. Season with salt and pepper. Place mixture into baking dish and bake uncovered for 25-30 minutes.
When zucchini is nearly cooked through, remove casserole dish from oven and sprinkle remaining 1/2 cup of pizza cheese over top. Return dish to the oven and bake 10-15 minutes longer or until cheese is melted and nicely browned and the zucchini is fully cooked.
