Ingredients:
- 3 - Eggs Beaten
- 2 cups - Sugar
- 1 cups - Vegetable oil
- 1 tablespoons - Vanilla
- 3 cups - Flour
- 1 teaspoons - Salt
- 1 teaspoons - Baking soda
- 1/2 teaspoons - Baking powder
- 1 tablespoons - Cinnamon
- 1 cups - Nuts or raisins
- 3 cups - Zucchini Shredded
- 3 - Eggs Beaten
- 2 cups - Sugar
- 1 cups - Vegetable oil
- 1 tablespoons - Vanilla
- 3 cups - Flour
- 1 teaspoons - Salt
- 1 teaspoons - Baking soda
- 1/2 teaspoons - Baking powder
- 1 tablespoons - Cinnamon
- 1 cups - Nuts or raisins
- 3 cups - Zucchini Shredded
Directions:
Beat together eggs and sugar. Add oil, zucchini and vanilla. Sift together all dry ingredients. Add to batter gentle mix until just combined don’t over mix. Nuts and or raisins can be added. Pour into 4 mini bread tins greased and floured. Bake at 325 oven for 50 min. If 2 large pans are used cook for 60 minutes
