Zucchini Bread

Ingredients:

  1. 1 cups - Oil
  2. 2 cups - Sugar
  3. 3 - Eggs
  4. 2 teaspoons - Vanilla
  5. 1 1/2 teaspoons - Cinnamon
  6. 3/4 teaspoons - Nutmeg
  7. 1/4 teaspoons - Baking powder
  8. 8 ounces - Crushed pineapple 1 can
  9. 3 cups - Flour
  10. 2 teaspoons - Baking soda
  11. 2 cups - Unpeeled Zucchini shredded
  12. 1 cups - Dates chopped
  13. 1 cups - Pecans chopped

Directions:

Beat oil, sugar, eggs and vanilla until thick. Add spices, baking powder, baking soda and flour. Add pineapple. Mix well. Lastly, add dates, nuts and zucchini.

Use 2 greased 9x5x3 bread pans. Bake 350° for 1 hour.
