Ingredients:
- 2 cups - all-purpose flour (not self-rising) sifted
- 3 teaspoons - cinnamon
- 1 teaspoons - salt
- 1 teaspoons - baking soda
- 3 - eggs
- 1 cups - vegetable oil
- 2 cups - sugar
- 3 teaspoons - vanilla
- 2 cups - grated zucchini seeds and skins removed
- - chopped nuts optional
Directions:
Sift together the flour, salt, baking soda, and cinnamon.
Mix together eggs, oil, sugar, and vanilla in a different bowl; beat well with mixer.
Add flour mixture to egg mixture, and beat again.
Stir in zucchini and chopped nuts (optional).
Pour into greased pan, and bake at 325 degrees F for 1 hour.
