Ingredients:
- 4 cups - coarsely shredded zucchini
- 3 cups - all-purpose flour
- 2 cups - sugar
- 1 1/4 cups - vegetable oil
- 4 - eggs
- 1 tablespoons - vanilla extract
- 1 teaspoons - vanilla extract
- 1 tablespoons - cinnamon
- 1 1/2 teaspoons - salt
- 1 1/2 teaspoons - baking soda
- 1/2 teaspoons - baking powder
- 1 cups - chopped nuts (optional)
- 4 cups - coarsely shredded zucchini
- 3 cups - all-purpose flour
- 2 cups - sugar
- 1 1/4 cups - vegetable oil
- 4 - eggs
- 1 tablespoons - vanilla extract
- 1 teaspoons - vanilla extract
- 1 tablespoons - cinnamon
- 1 1/2 teaspoons - salt
- 1 1/2 teaspoons - baking soda
- 1/2 teaspoons - baking powder
- 1 cups - chopped nuts (optional)
Directions:
Preheat oven to 325 degrees. Grease 2 loaf pans on the bottom only.
Blend all ingredients except for the zucchini until well blended, scraping the bowl often. Fold in zucchini and divide batter amongst pans. Cook for 50-60 minutes or until done. Cool for 10 minutes in the pan before removing.
