Zucchini Bread

Ingredients:

  1. 4 cups - coarsely shredded zucchini
  2. 3 cups - all-purpose flour
  3. 2 cups - sugar
  4. 1 1/4 cups - vegetable oil
  5. 4 - eggs
  6. 1 tablespoons - vanilla extract
  7. 1 teaspoons - vanilla extract
  8. 1 tablespoons - cinnamon
  9. 1 1/2 teaspoons - salt
  10. 1 1/2 teaspoons - baking soda
  11. 1/2 teaspoons - baking powder
  12. 1 cups - chopped nuts (optional)
  13. 4 cups - coarsely shredded zucchini
  14. 3 cups - all-purpose flour
  15. 2 cups - sugar
  16. 1 1/4 cups - vegetable oil
  17. 4 - eggs
  18. 1 tablespoons - vanilla extract
  19. 1 teaspoons - vanilla extract
  20. 1 tablespoons - cinnamon
  21. 1 1/2 teaspoons - salt
  22. 1 1/2 teaspoons - baking soda
  23. 1/2 teaspoons - baking powder
  24. 1 cups - chopped nuts (optional)

Directions:

Preheat oven to 325 degrees. Grease 2 loaf pans on the bottom only.

Blend all ingredients except for the zucchini until well blended, scraping the bowl often. Fold in zucchini and divide batter amongst pans. Cook for 50-60 minutes or until done. Cool for 10 minutes in the pan before removing.
