Ingredients:
- 3 whole - Eggs
- 2 cups - Sugar
- 3 teaspoons - Vanilla
- 1 cups - Oil Scant cup
- 2 cups - Zucchini grated
- 2 cups - Flour generous
- 2 teaspoons - Baking soda
- 1/4 teaspoons - Baking powder
- 1 teaspoons - Salt
- 1 tablespoons - Cinnamon, nutmeg or ginger
- 1 cups - Nuts Chopped
Directions:
1. Preheat oven to 350 F.
2. Beat eggs, sugar, vanilla.
3. Add oil and beat until lemon color.
4. Add zucchini and mix
5. Stir in dry ingredients, in a separate bowl.
6. Add dry ingredients into egg mixture and stir
7. Mix in nuts, if using.
8. Bake in a greased and floured 9x5 pan for an hour.
