Zucchini and Corn

Ingredients:

  1. 2 whole - Medium Zucchini
  2. 2 tablespoons - Bacon Drippings or Oil
  3. 16 - Corn Kernels
  4. 1 whole - Small Onion diced

Directions:

Wash zucchini thoroughly and dice. Do not peel.

Heat bacon drippings or oil in large skillet. Simmer zucchini, corn, and onions in covered skillet over low heat for 15-20 minutes, or until tender and lightly browned.

Serve hot with tortillas.
