Ziti with Eggplant and Ricotta

Ingredients:

  1. - Nonstick Cooking Spray
  2. 2 cloves - Garlic minced
  3. 1/2 cups - Onion chopped
  4. 1/2 teaspoons - Dried Rosemary
  5. 1 - Large Eggplant peeled and chopped
  6. 1 pounds - Ziti
  7. 2 cups - Fat-free Ricotta Cheese
  8. 1/4 cups - Parmesan Cheese divided
  9. 4 - Ripe Tomatoes coarsely chopped
  10. 1 cups - Basil chopped
  11. - Nonstick Cooking Spray
  12. 2 cloves - Garlic minced
  13. 1/2 cups - Onion chopped
  14. 1/2 teaspoons - Dried Rosemary
  15. 1 - Large Eggplant peeled and chopped
  16. 1 pounds - Ziti
  17. 2 cups - Fat-free Ricotta Cheese
  18. 1/4 cups - Parmesan Cheese divided
  19. 4 - Ripe Tomatoes coarsely chopped
  20. 1 cups - Basil chopped

Directions:

Spray large nonstick skillet with nonstick spray
Heat skillet on medium heat
Add garlic, onion and rosemary and cook until onion is translucent
Add eggplant and sauté until tender

Cook pasta to desired firmness

Blend together fat-free ricotta and about half of the parmesan cheese

Drain pasta and transfer to a large bowl
Immediately add ricotta mixture and toss until pasta is coated
Add chopped tomatoes, basil and eggplant mixture and toss again
Sprinkle with remaining Parmesan cheese and serve
