Notes:
If you use dried beans in this recipe, be sure to soak them overnight. Then add the beans to the pan after pouring in beer, and let cook down 60-90 minutes to let beans soften up before continuing with rest of recipe directions.

Ingredients:
- 1 pounds - ground bison (buffalo)
- 1 pounds - ground chicken or turkey
- 1 tablespoons - extra virgin olive oil
- 1 - small-medium onion diced
- 1 - bay leaf
- 2 teaspoons - ground cumin
- 2 teaspoons - dried chili pepper or more if you like
- 1 teaspoons - white pepper
- 1 cups - beer
- 1 cans - black beans drained
- 1 cans - cannellini beans drained
- 1 cans - crushed tomatoes large can
- 1 cans - tomato paste
- 4 cups - chicken broth or stock
Directions:
1. In large pot, brown meat until no red appears. Drain and remove from pot.
2. Add oil to pot and sauté onions, bay leaf and half of the spices. Cook for 2-3 minutes over medium heat.
3. Add beer and allow to reduce until liquid is almost evaporated (several minutes). Add browned meat, beans, remaining spices and crushed tomatoes. Stir to incorporate mixture well.
4. Add broth/stock, bring to boil then reduce heat to simmer. Allow to simmer, covered for at least 45 minutes over low heat.
