Yummy Pumpkin and Orange Pancakes

  1. 2 cups - All-purpose baking mix (such as Bisquick)
  2. 1 cups - Fat-free milk
  3. 1 cups - Pumpkin puree
  4. 2 - Large eggs
  5. 1 teaspoons - Grated orange peel
  6. - Pam spray
  7. 1/4 cups - Maple syrup


Crack 2 eggs and put in large bowl. Zest an orange to get about 1 tsp. and put into large bowl. Combine baking mix, milk and pumpkin with other ingredients in large bowl. Mix ingredients until well blended. Heat a griddle or large, nonstick skillet over medium-high heat on the stove. Spray pam on griddle on melt butter on griddle. Pour 1/4 cup of pancake batter onto hot griddle for each pancake. Cook for 2-3 minutes (watch for bubbles showing) on each side or until golden brown on each side. Serve with syrup.
