Ingredients:
- 2 cups - plain Greek yogurt
- 4 - egg whites
- 1/4 cups - coconut oil
- 2 tablespoons - pure vanilla
- 1/4 cups - natural honey
- 1 1/2 tablespoons - baking powder
- 3/4 teaspoons - baking soda
- 2 cups - unbleached spelt flour
- 2 tablespoons - ground flaxseed
- 1 cups - fresh blueberries
Directions:
1. Place all ingredients, except blueberries, in a large bowl. Use an eggbeater to blend all ingredients until a smooth batter results.
2. Fold blueberries into the batter.
3. For fluffier pancakes, let the mixture stand for 20 minutes. Otherwise, use a small ladle to pour batter onto a hot pan and cook for about 1 minute on each side. Serve.
