Yogurt Pancakes with Blueberries and Flaxseed

Ingredients:

  1. 2 cups - plain Greek yogurt
  2. 4 - egg whites
  3. 1/4 cups - coconut oil
  4. 2 tablespoons - pure vanilla
  5. 1/4 cups - natural honey
  6. 1 1/2 tablespoons - baking powder
  7. 3/4 teaspoons - baking soda
  8. 2 cups - unbleached spelt flour
  9. 2 tablespoons - ground flaxseed
  10. 1 cups - fresh blueberries

Directions:

1. Place all ingredients, except blueberries, in a large bowl. Use an eggbeater to blend all ingredients until a smooth batter results.

2. Fold blueberries into the batter.

3. For fluffier pancakes, let the mixture stand for 20 minutes. Otherwise, use a small ladle to pour batter onto a hot pan and cook for about 1 minute on each side. Serve.
