Ingredients:
- 1 - small can diced tomatoes
- 1 - small can carrots
- 1 - small can vegetarian beans in tomato sauce
- 1 - large onion chopped
- 1 - red pepper cored, seeded, diced
- 4 - carrots sliced into rounds
- 3 - celery sticks thinly sliced
- 2 cloves - garlic crushed or minced
- 1 pounds - lean ground beef
- 1 pounds - lean ground turkey
- 2 cups - cooked rice I used family pkg of Uncle Ben's rice pouches
- 1 - large can diced tomatoes
Directions:
1. Spray pan with cooking spray.
2. Sauté the onion, red peppers, carrots, celery and garlic until the vegetables begin to soften, about 8 minutes.
3. Remove from pan and set aside.
4. Brown ground beef and turkey.
5. Add the veggies and cooked rice and cook over low heat, stirring often, for 10-15 minutes to let the flavors meld.
6. Blend the small can of diced tomatoes, can of carrots and can of beans into a blender or food processor or with a hand blender to be the consistency of tomato soup.
7. Stir the tomatoes and soup into the meat mixture. Simmer for another 20 minutes.
