Winter Stew

Ingredients:

  1. 1 - small can diced tomatoes
  2. 1 - small can carrots
  3. 1 - small can vegetarian beans in tomato sauce
  4. 1 - large onion chopped
  5. 1 - red pepper cored, seeded, diced
  6. 4 - carrots sliced into rounds
  7. 3 - celery sticks thinly sliced
  8. 2 cloves - garlic crushed or minced
  9. 1 pounds - lean ground beef
  10. 1 pounds - lean ground turkey
  11. 2 cups - cooked rice I used family pkg of Uncle Ben's rice pouches
  12. 1 - large can diced tomatoes

Directions:

1. Spray pan with cooking spray.

2. Sauté the onion, red peppers, carrots, celery and garlic until the vegetables begin to soften, about 8 minutes.

3. Remove from pan and set aside.

4. Brown ground beef and turkey.

5. Add the veggies and cooked rice and cook over low heat, stirring often, for 10-15 minutes to let the flavors meld.

6. Blend the small can of diced tomatoes, can of carrots and can of beans into a blender or food processor or with a hand blender to be the consistency of tomato soup.

7. Stir the tomatoes and soup into the meat mixture. Simmer for another 20 minutes.
