Ingredients:
- 1 1/2 pounds - Wild Texas Shrimp
- 2 tablespoons - HEB Basting Oil or Olive oil
- 1 tablespoons - Adams Reserve Southwest Rub
- 2 cloves - Garlic Crushed or minced
- 1 cups - HEB Roasted Red and Yellow Peppers Drained & chopped*
- 1/4 cups - Fresh cilantro Chopped
- 1 bags - 16-oz. Frozen HEB Poblano & Corn Steamable Rice
- 1 tablespoons - Fresh lemon juice
- - Feta or white Mexican cheese Crumbled
Directions:
1. Peel and devein shrimp. Toss with oil, Southwest rub and garlic. Set aside for 5 min.
In the meantime, cook rice according to package directions and set aside.
2. Heat a large, non-stick skillet over Medium-High heat until very hot. Add shrimp; saute 3 min., scooping and turning continuously, or until shrimp begins to curl. Stir in roasted peppers and cilantro. Remove from heat.
3. Spoon mixture over rice and squeeze about 1 T. lemon juice over shrimp mixture; top w/ crumbled feta or white Mexican cheese and serve.
