Wild Mushroom Filling for Ravioli

Ingredients:

  1. 2 tablespoons - unsalted butter
  2. 1 cups - chopped onion
  3. 3 cloves - garlic minced
  4. 4 cups - assorted mushrooms (cremini, shiitake, oyster or portobello) chopped
  5. 1/2 cups - dry white wine
  6. 1/4 teaspoons - crushed red pepper
  7. 1/4 teaspoons - salt

Directions:

In a large skillet, melt butter over medium heat. Add onion and garlic; cook and stir 2 minutes or until softened.

Add mushrooms; cook and stir about 5 minutes or until tender and any liquid has evaporated.

Add wine, crushed red pepper and salt. Simmer, uncovered, about 10 minutes or until evaporated and mushrooms begin to brown.

Transfer mushroom mixture to a food processor. Cover and pulse until finely chopped. Use to fill ravioli or serve on garlic bread.
