LEMON CREAM CHEESE FROSTING Mix 8 oz. cream cheese (softened) and 4 c. powdered sugar. Add 2 t. finely shredded lemon peel and 1 t. vanilla. Beat with electric mixer. Frost between layers and on top of cake. Sprinkle with walnuts.

Ingredients:
- 2 cups - sugar
- 1 cups - white flour
- 1 cups - whole wheat flour
- 2 teaspoons - baking powder
- 1 teaspoons - cinnamon
- 1/2 teaspoons - baking soda
- 1/2 teaspoons - salt
- 3 cups - shredded carrots
- 1 cups - cooking oil
- 4 ears - eggs
Directions:
Grease and flour 2 round cake pans. Mix ingredients. Turn into pans and bake 350 for 35-40 minutes. Cool for 10 minutes and remove from pans. Cool thoroughly. See frosting recipe below. I often add 50% more of each ingredient for a taller cake, with more servings.
