Ingredients:
- 2 teaspoons - active dry yeast
- 1/4 cups - honey
- 1 1/2 tablespoons - canola oil
- 2/3 cups - warm water
- 1 - banana mashed
- 1 - egg
- 1/2 teaspoons - vanilla extract
- 1 teaspoons - ground cinnamon
- 1 1/2 cups - whole wheat flour
- 1 1/2 cups - unbleached bread flour
Directions:
In the bowl of your stand mixer, stir together the yeast, honey, canola oil, and warm water. Set sit for 5 minutes until foamy.
Stir in the banana, egg, and vanilla extract. With your dough hook on low, add in the remaining ingredients until the dough comes together.
Spread the dough into a 9″ x 5″ loaf pan that has been sprayed with canola oil.
Cover and set in a warm place until it has risen above the edge of the pan (45-60 minutes).
Preheat the oven to 350°F. Bake for 30-35 minutes, until the top is golden brown and it sounds hollow when you tap the top. Allow to cool in the pan for 5 minutes.
Remove the bread from the pan and place on a cooling rack until completely cooled.
