Ingredients:
- 1 cups - Toasted pecans
- 2 - Scallions minced
- 3 tablespoons - Canola oil
- 1 1/2 tablespoons - Champagne vinegar or white wine vinegar
- 1 - Orange zest
- 1/2 - Orange juiced
- 1/2 teaspoons - Tumeric
- 1/2 teaspoons - Dried thyme
- 1/2 teaspoons - Dried tarragon
- - Salt to taste
- - Pepper to taste
- 2 cups - Israeli couscous
- 1 cups - Dried cranberries
Directions:
1. Boil couscous (8-10 minutes), drain but don't rinse.
2. In small bowl, mix canola oil, OJ, vinegar, orange zest and spices.
3. Combine the couscous, pecans, cranberries, scallions and mix with dressing.
4. Chill and serve.
