Whole Foods Couscous Cranberry & Pecan

Ingredients:

  1. 1 cups - Toasted pecans
  2. 2 - Scallions minced
  3. 3 tablespoons - Canola oil
  4. 1 1/2 tablespoons - Champagne vinegar or white wine vinegar
  5. 1 - Orange zest
  6. 1/2 - Orange juiced
  7. 1/2 teaspoons - Tumeric
  8. 1/2 teaspoons - Dried thyme
  9. 1/2 teaspoons - Dried tarragon
  10. - Salt to taste
  11. - Pepper to taste
  12. 2 cups - Israeli couscous
  13. 1 cups - Dried cranberries

Directions:

1. Boil couscous (8-10 minutes), drain but don't rinse.
2. In small bowl, mix canola oil, OJ, vinegar, orange zest and spices.
3. Combine the couscous, pecans, cranberries, scallions and mix with dressing.
4. Chill and serve.
