White Chocolate Pistachio Cookies

Ingredients:

  1. 1 cups - butter softened
  2. 1 1/2 cups - firmly packed brown sugar
  3. 2 - large eggs
  4. 1 teaspoons - vanilla extract
  5. 1/2 teaspoons - orange extract
  6. 3 cups - all-purpose flour
  7. 1 teaspoons - baking soda
  8. 1/2 teaspoons - baking powder
  9. 1/2 teaspoons - salt
  10. 1 bags - 12 oz. white chocolate morsels
  11. 1 cups - quick-cooking oats
  12. 1 cups - chopped pistachios

Directions:

1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper.

2. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and orange extract.

3. In a medium bowl, combine flour, baking soda, baking powder, and salt; gradually add to butter mixture, beating until combined. Beat in chocolate morsels, oats and pistachios.

4. Drop by heaping tablespoonfuls onto prepared baking sheets. Bake for 10-12 minutes or until lightly browned. Let cool on pans for 2 minutes. Remove from pans and cool completely on wire racks. Store in airtight containers.
