Ingredients:
- 1 cups - all-purpose flour
- 1/2 teaspoons - baking soda
- 1/2 teaspoons - ground cinnamon
- 1/4 teaspoons - salt
- 1/2 cups - unsalted butter softened
- 2 tablespoons - unsalted butter softened
- 1/2 cups - granulated sugar
- 1/2 cups - light brown sugar firmly packed
- 1 - large egg
- 1 teaspoons - orange extract or 1/2 tsp orange zest
- 1 cups - uncooked regular oats
- 1 1/2 cups - white chocolate chips
- 1/2 cups - raisins or golden raisins
Directions:
Combine first 4 ingredients in a medium bowl.
Beat 1/2 cup plus 2 tablespoons butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Beat in egg and orange flavoring just until combined. Add flour mixture and oats; stir until blended. Stir in white chocolate and raisins. Cover and chill dough 30 minutes.
Line 2 large baking sheets with parchment paper. Drop batter by heaping teaspoonfuls, 2" apart, onto prepared baking sheets.
Bake at 350° for 10 to 12 minutes or until lightly browned. Cool on baking sheets 5 minutes. Transfer cookies to wire racks to cool completely.
