White Chicken Chili

Ingredients:

  1. 3 pounds - Boneless Chicken Thighs
  2. 2 tablespoons - Olive Oil separated
  3. 1 - Jalapeno seeded and chopped
  4. 1 - Onion chopped
  5. 3 cloves - Garlic
  6. 1 cans - Chopped green chilies (4 oz)
  7. 1 tablespoons - Pampered Chef Southwest Seasoning
  8. 1/2 teaspoons - Pampered Chef Tex Mex Rub
  9. 1/4 teaspoons - Pampered Chef Chili Lime Rub
  10. 1 dashes - Cayenne
  11. 1 dashes - Paprika
  12. 1 dashes - Black pepper
  13. 1/2 cups - Heavy cream
  14. 4 ounces - Cream cheese
  15. 2 cans - White beans (15 oz)
  16. - Cilantro chopped
  17. - Mexican cheese
  18. 4 cups - Chicken broth

  24. 1 cans - Chopped green chilies (4 oz)
  25. 1 tablespoons - Pampered Chef Southwest Seasoning
  26. 1/2 teaspoons - Pampered Chef Tex Mex Rub
  27. 1/4 teaspoons - Pampered Chef Chili Lime Rub
  28. 1 dashes - Cayenne
  29. 1 dashes - Paprika
  30. 1 dashes - Black pepper
  31. 1/2 cups - Heavy cream
  32. 4 ounces - Cream cheese
  33. 2 cans - White beans (15 oz)
  34. - Cilantro chopped
  35. - Mexican cheese
  36. 4 cups - Chicken broth

Directions:

1. In a large skillet, heat 1 Tablespoon olive oil over medium heat. Season one side of chicken with 1/2 tsp. salt, 1/2 tsp. paprika, and 1/8 tsp cayenne. Lay seasoned side of chicken down in skillet, season other side. Cook uncovered (Or with a splatter screen) for 10 minutes per side, until chicken reaches an internal temperature of 165 degrees. Chop chicken and set aside.

2. Add onion and jalapeno to skillet with 1 Tablespoon olive oil. Saute until tender. Add garlic, green chilies, and spices, cook about 3 minutes more. Combine veggie mixture in a large pot with chicken broth, chicken, and beans. Bring to a simmer, add heavy cream and cream cheese. Simmer for 15 minutes, until the cream cheese is melted.

3. Top bowls of chili with cheese and cilantro! Enjoy!
