White Bean and Vegetable Stew

Ingredients:

  1. 2 cans - 14 oz. Great Northern Beans with liquid coarsely mash ONE can
  2. 2 tablespoons - Pampered Chef Rosemary-Infused Canola Oil
  3. 3 tablespoons - Pampered Chef Herbs de Provence Seasoning mix
  4. 1 tablespoons - Pampered Chef Garlic & Herb rub
  5. 1 - onion diced or wedged
  6. 3 - celery stalks sliced into 1/4-inch pieces
  7. 3 - carrots (OR use baby carrots) peeled, sliced into 1/4-inch pieces
  8. 1 cans - 14 oz. diced tomatoes undrained
  9. 1 cans - 14.5 oz. vegetable broth
  10. 3 - medium yellow potatoes wash, peel, cut into 2-inch pieces when ready to cook stew

Directions:

Combine all ingredients except potatoes and place in a freezer bag, labeled, laid flat in freezer for freezing.

When ready to cook:

If ingredients are frozen, combine with potatoes, and add to crockpot, cooking on high heat for 4-6 hours.

If ingredients are thawed, combine with potatoes, and add to Pampered Chef Rockcrok Casserole or Deep Dish Covered Baker; cook in microwave on high heat for 30-40 minutes.
