Whipped Lemon Shortbread

  1. 2 cups - butter
  2. 1 cups - icing sugar
  3. 1 teaspoons - vanilla or lemon extract
  4. 3 cups - flour
  5. 1/2 cups - cornstarch
  6. - lemon zest from 2 lemons


Cream butter and sugar together. Beat in the vanilla or lemon extract.

Add flour and cornstarch; beat until mixture resembles whipped cream. Fold in lemon zest.

Drop from teaspoons onto greased cookie sheet. Bake at 350 degrees F for 7 minutes; turn pans and bake for another 7 minutes.
