Whipped Coconut Cream

Ingredients:

  1. 1 cans - 14 oz. full-fat coconut milk
  2. 1/2 tablespoons - vanilla extract
  3. 1 1/2 tablespoons - honey

Directions:

Refrigerate coconut milk for at least 6 hours; the cream will separate from the water.

Scoop the cream only into a medium bowl; discard the water. Add the vanilla extract and honey to the bowl with the cream. Whip with a hand mixer until soft peaks form, approximately 3-5 minutes.

Serve over fresh berries or a favorite dessert.
