    The Year Sarah went off to Military Basic Training Wendy renewed her place in our lives. She was a home base respite for Sarah when she got a break from training and became an open home for all of us when we traveled to the area. That Thanksgiving Wendy and her husband welcomed all of us with open arms into her family and this is one of the family favorites she made to share with us all. Enjoy!

Ingredients:

  1. 3 - Eggs
  2. 2/3 cups - Pumpkin
  3. 1 cups - Sugar
  4. 1 teaspoons - Lemon Juice
  5. 3/4 cups - Flour
  6. 1 teaspoons - Baking Powder
  7. 1/2 teaspoons - Ginger
  8. 1/2 teaspoons - Nutmeg
  9. 2 teaspoons - Cinnamon
  10. 1 cups - Pecans (optional) Chopped
  11. - Confectioner Sugar
  12. 4 ounces - Cream Cheese soften
  13. 8 ounces - Cool Whip
  14. 1 teaspoons - Vanilla Extract
  15. 1 cups - Confectioners Sugar

Directions:

Set Oven temp to 375.
Grease Jelly Roll Pan. (small coolie sheet)
Beat Eggs for 5 minutes before adding other ingredients.
Add the following: Pumpkin, Sugar, Lemon Juice, Flour, Baking Powder, Ginger, Nutmeg, and Cinnamon. Mix until batter is smooth.
Pour Batter into greased jelly roll pan and sprinkle with Chopped Pecans (optional).
Bake @ 375 for 10 minutes.
Sprinkle Confectioners Sugar on a towel. Remove pan from oven and turn onto towel, roll up and set aside to cool.
Combine ingredients for filling; Cream Cheese, Cool Whip, Vanilla and Confectioners Sugar and Blend Well.
Once cool unroll the cake roll, spread filling on the surface of the sheet cake and reroll.
Sprinkle top with Confectioners Sugar.
Refrigerate for at least 2 hours before serving.
