Watermelon Mimosas (Aunt Caren)

Ingredients:

  1. 8 cups - Watermelon Cubed
  2. 2 - Lime Juice of
  3. 4 tablespoons - Granulated sugar
  4. 2 bottles - Champagne or Prosecco
  5. - Mint
  6. - Watermelon wedges

Directions:

Blend together cubed watermelon, lime juice, and sugar in a blender.

Strain mixture through a fine mesh sieve, discarding solids.

Fill champagne flutes halfway with watermelon mixture and top off with champagne.

Garnish glasses with a few mint sprigs and a watermelon wedge.
