Watermelon & Feta Salad

Ingredients:

  1. 2 tablespoons - Olive oil
  2. 1 tablespoons - White wine vinegar
  3. 1 tablespoons - Fresh lime juice
  4. - Kosher salt & pepper
  5. 1/4 - Small red onion Thinly sliced
  6. 1 whole - 1-lb. piece seedless watermelon
  7. 1/2 whole - Seedless cucumber Sliced into half-moons
  8. 3 cups - Baby arugula
  9. 3 ounces - Feta cheese (about 3/4 C) Crumbled

Directions:

1. In a large bowl, whisk together the oil, vinegar, lime juice and 1/4 tsp. each kosher salt and pepper. Add the onion and let sit, tossing occasionally, for 10 minutes.
2. Meanwhile, remove and discard the watermelon rind. Cut the watermelon into thin 2-in. pieces.
3. Add the watermelon, cucumber and arugula to the bowl of onions and gently toss to combine. Top with the feta cheese.
