Warm Bacon-Mushroom Vinaigrette

Ingredients:

  1. 4 - bacon (about 4 slices)
  2. 2 cups - mushrooms sliced
  3. 3 tablespoons - sherry vinegar
  4. 1/4 cups - water
  5. 2 tablespoons - vegetable oil
  6. - kosher salt
  7. - freshly ground black pepper
  8. 2 tablespoons - flat-leaf parsley chopped

Directions:

Cut bacon into 1/2"-wide strips. Cook bacon with 3 Tbsp water in a medium skillet over medium heat, stirring ofte, until bacon starts to crisp. Add mushrooms, cook, tossing occasionally, until tender, 5-6 minutes. Add vinegar and 1/4 c. water; simmer until reduced by halt, about 1 minute. Stir in oil. Season with salt and pepper. Stir in parsley.
