I found this recipe and really enjoy on www.naturallyashley.com. Our daughter has adopted a vegan lifestyle, so we are always trying new recipes with her in mind. This salad is great and the avocado makes a nice, creamy dressing.

Ingredients:
- 1 - large avocado skinned and seeded
- 1 tablespoons - mustard
- 1 - medjool date pitted
- 2 tablespoons - fresh lemon juice
- - handful of fresh parsley
- 1 heads - broccoli chopped (about 3-4 cups)
- 1 cups - sliced celery
- 1 cups - sliced red grapes
- 1/2 cups - walnut pieces
Directions:
In a blender or processor add avocado, mustard, date, and lemon juice. Blend together. Add fresh parsley and blend with a pulse or two.
Place broccoli and celery in a large bowl. Pour avocado dressing over and toss together.
Add in grapes and walnuts and gently combine. Chill in the fridge before serving. Enjoy!
