Ingredients:

  1. 1 1/2 cups - cooked wheat berries
  2. 4 leaves - to 6 leaves of butter lettuce
  3. 2 tablespoons - fat-free Greek yogurt
  4. 1 1/2 tablespoons - lemon juice
  5. 2 teaspoons - extra virgin olive oil
  6. 2 teaspoons - chopped taragon plus extra leaves for garnish
  7. 1 1/2 teaspoons - Dijon mustard
  8. 1/4 teaspoons - kosher salt
  9. 1/4 teaspoons - black pepper
  10. 1 cups - cubed cooked chicken
  11. 1/2 cups - chopped apple
  12. 1/2 cups - chopped celery
  13. 1/2 cups - halved grapes
  14. 1/4 cups - chopped pecans
  15. 1/4 cups - chopped red onion

Directions:

Divide wheat berries and lettuce between 2 bowls.

Whisk together yogurt, lemon juice, oil, tarragon, mustard, salt and pepper in a small bowl; drizzle some over each bowl of wheat berries and lettuce.

Top each bowl with remaining ingredients. Garnish with tarragon leaves and drizzle with remaining dressing.
