Wakefield Crab Omelet

  1. 1 packages - 6 oz. Wakefield frozen Alaska King or Snow Crabmeat
  2. 8 - eggs
  3. 1/4 cups - sliced mushrooms or more to taste
  4. 1/4 cups - chopped onions or green peppers
  5. 1 cups - grated cheese (Swiss or cheddar)
  6. 2 tablespoons - butter


Thaw and drain crab. Mix crab liquid with water to make 1/4 cup and beat with eggs.

Over medium heat, melt half the butter and add half the egg mixture. As eggs set, lift edges and let uncooked eggs run underneath.

Add half the crab and other ingredients. When cheese melts, fold omelet and keep warm while making second omelet.
