I've attempted this recipe with little luck ... not sure what the deal was, but I pass it along, as Mom made them every New Year's Eve or other special evenings ... we loved them as kids.

Ingredients:
- 3 tablespoons - butter
- 5 tablespoons - flour
- 1 cups - beef broth
- 1/2 pounds - cold, cooked veal shredded
- 1/4 teaspoons - salt
- - pepper
- - nutmeg
- 1/4 teaspoons - Worcestershire
- 1 cups - fine dry bread crumbs
- 2 - egg whites beaten
Directions:
Heat butter, stir in flour and cook 2 minutes. Gradually add the broth, stirring constantly until a smooth paste forms. Add the veal, salt, pepper and Worcestershire.
Spread out and refrigerate until firm; when set, cut into 8 equal parts and form cylinders 3 inches long and 1 inch in diameter. Roll each in bread crumbs, then in egg whites, then again in bread crumbs. (Must be completely coated).
Deep fry in hot oil a few at a time for 3-5 minutes. Drain and serve hot.
