Ingredients:

  1. 1 - egg white
  2. 2 teaspoons - canola, peanut or olive oil
  3. 1/2 cups - spinach leaves
  4. 1/2 cups - mushrooms
  5. - onions
  6. - garlic
  7. - herbs
  8. 2 tablespoons - reduced fat cheese
  9. 1 slices - whole grain toast
  10. 1 teaspoons - canola oil margarine
  11. 1 cups - fat-free milk or calcium enriched soy or rice beverage

Directions:

Cook 1 egg white in a pan with 2 tsp canola, peanut or olive oil. Add ½ c spinach leaves, ½ c mushrooms, onions, garlic, and herbs as desired; and top with 2 Tbsp reduced fat cheese. Serve with 1 slice 100% whole grain toast spread with 1 tsp canola-oil margarine and 1 c fat-free milk or calcium-enriched soy or rice beverage.
