Veggie Bean Soup

Ingredients:

  1. 1/2 cups - chopped onion
  2. 1/2 cups - sliced celery
  3. 1/2 cups - sliced fresh carrots
  4. 1/2 teaspoons - minced garlic
  5. 1 tablespoons - olive oil
  6. 2 cups - water
  7. 15 1/2 ounces - great northern beans, rinsed and drained
  8. 3/4 cups - Chicken Broth
  9. 3/4 cups - Italian stewed tomatoes
  10. 1/2 cups - cubed peeled potato
  11. 1/2 cups - frozen cut green beans
  12. 1 - bay leaf
  13. 1/2 teaspoons - salt, optional
  14. 1/4 teaspoons - pepper

Directions:

In a large saucepan, saute the onion, celery and carrots in oil until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through. Discard bay leaf.
