Ingredients:
- 6 - organic eggs lightly beaten
- 2 teaspoons - Extra Virgin Olive Oil
- 1 - Small Onion diced small
- 2 cloves - Garlic chopped fine
- 1 - Red Bell Pepper diced small
- 3 1/2 cups - Broccoli finely chopped
- 3 1/2 teaspoons - Dried Thyme
- 1/2 teaspoons - Ground Black Pepper
- 1/2 teaspoons - Unrefined Sea Salt
Directions:
1. In a medium skillet, head olive oil or butter; add diced onion and garlic and saute over medium heat until soft; about 5 minutes.
2. Place cooked onion and garlic in a bowl with the red bell pepper, chopped broccoli, dried thyme, black pepper and sea salt. Mix well.
3. Add eggs. Mix well and then pour egg and vegetable mixture into a buttered casserole dish or bread pan.
4. Bake at 375 degrees for 25-30 minutes or until eggs are cooked.
5. Serve topped with avocado slices and tomato salsa. (optional)
