Ingredients:
- 6 - organic eggs lightly beaten
- 2 teaspoons - extra virgin olive oil
- 1 - small onion diced small
- 1 - red bell pepper diced small
- 2 - garlic cloves finely chopped
- 1 1/2 cups - brocolli finely chopped
- 1 1/2 teaspoons - dried thyme
- 1/2 teaspoons - ground pepper
- 1/2 teaspoons - unrefined sea salt
- 1/2 teaspoons - freshly ground pepper
Directions:
Preparation:
1. In a medium skillet, heat olive oil and add diced onion and garlic. Saute over medium heat until soft, about 5 minutes.
2. Placed cooked onion and garlic in a small bowl with red bell peppers, chopped broccoli, dried thyme, black pepper and sea salt. Mix well.
3. Add eggs. Mix well and then pour egg and vegetable mixture into a lightly buttered or sprayed casserole dish or bread pan.
4. Bake at 375 degrees for 25-30 minutes or until eggs are cooked.
5. Served with an avocado slice and tomato salsa (optional).
NOTE: I like to serve with organic black beans on the side and kick it up a notch with Tabasco sauce!
