Vegan Beef and Broccoli

Directions:

1. Whisk all of the sauce ingredients in a small bowl.

2. Drain tofu by wrapping it in a paper towel and setting a heavy pan on top for 15 minutes. Then cut tofu into small bite-size cubes.

3. Cover the tofu with the sauce and let the tofu marinate for 30 min- 1 hour in the fridge.

4. Once the tofu is ready, chop onions and saute them over medium heat in a large, deep-set pan for 5 minutes. Add tofu to pan and let simmer for 10 minutes, stirring occasionally.

5. Fill a separate pot halfway with water and bring to boil, then let simmer. Place a coriander full of the broccoli on top of the boiling water. Then cover with lid and let steam for 5 minutes.

6. Stir broccoli into tofu and onion mixture. Serve over rice and enjoy!
